Mango Black Bean Salsa
Having spent quite a bit of time in Puerto Rico, I know that the mango season can be overwhelming. Even though I love mangos, I actually remember telling a dear friend, Nelson Montalvo, "Please, no more mangos!" as he waited for me at his fence with his daily gift of a whole bagful. This recipe, just one of many uses for the fruit, was developed out of desperation to use them up.
